Bon Vivant is a venture-backed, fast-growing company and following our seed round we are looking for a Food Scientist Senior (M/F) in Lyon to contribute to the development of Bon Vivant's protein ingredients.
What You Will Be Doing
- Demonstrating the functional properties of Bon Vivant ingredients through the development of suitable analytical methods, through food applications and in particular cheese applications (characterization of functional properties, development of food applications (formulations/processes) adapted to BV ingredients, recommendations for specific implementation of ingredients)
- Leading research and development work on the suitability of recombinant milk proteins for food processing (design of experiments, and reporting of results)
- To transfer expertise in food science (in particular the structure-function-application aspects) to the R&D teams in charge of the upstream engineering of strains or USP/DSP, in order to objectify the selection of proteins of interest and their manufacturing processes
- Generate intellectual property around these missions to build the competitive advantages of Bon Vivant
- Supporting sale teams and management in promoting proteins to customers (technical and marketing support, proof of concept)
- Transpose customer requests into laboratory and pilot experiments
- Carry out studies and technological monitoring in the alternative proteins sector
- You are passionate about Bon Vivant’s mission
- You have +6 years of experience in the dairy industry/ ideally in cheese production
- You are fluent in French and English both written and spoken
- Clear attention to detail and personal drive to produce consistently accurate work PhD Food science, specialization in Dairy Science with a focus on physical chemistry/biochemistry/process engineering (PhD "application" in partnership with a company, ideally through a CIFRE or in a research program involving an industrial/application component)
